Soups


Simple Soup

This is a staple in our house.  We eat it once a week with lots of bread. The ingredients are things I tend to keep in my cabinets because this soup is quick and easy to throw together when we are short on ideas.


Ingredients:
1/2 cup veg broth
1 lrg onion diced
3-5 sliced carrots (depending on size)
3 cloves of garlic minced
4-5 potatoes cubed
3 celery stalks chopped
1 can red or pinto beans
1 can red kidney beans
1 can of corn (optional)
1 can of diced tomatoes
1 sm can of tomato sauce
1 tbls parsley
2 cups of water
2 tbls of crushed red pepper (wet kind near the goya products) (optional)
salt and pepper

steam/saute carrots, onion, celery, and garlic in the veg broth at the bottom of your soup pan until the onions are translucent, and the celery is bright green. Add beans with juice from the can, corn, diced and tomato sauce, parsley, crushed red pepper, potatoes, water, and salt and pepper to taste.

bring to a boil, then lower and let simmer for 30-40 minutes stirring occasionally.
