Ingredients:
- 2 tbsp oil
- 3 cloves garlic, minced
- 2 bell peppers, chopped (I used a yellow and an orange pepper)
- 1 lrg onion, chopped
- 3 carrots, peeled and chopped
- 1 tbsp cumin
- a small bunch of kale stems removed and chopped (optional)
- 3 tbsp chili powder
- salt & pepper
- 1 tsp cayenne
- 1 can each: black beans, pinto beans, red beans (rinse in collinder)
- 1 can diced tomatoes with juice
- 2 tsp oregano
- 1 can of tomato sauce
- 12 oz of ketchup (half a regular bottle)
- 1 lb of seitan finely chopped (optional)
